This creamy and rich cheesecake is easy to make and absolutely delicious. It’s a favorite for any occasion!
Ingredients:
- 5 large eggs (at room temperature)
- 2 cups sour cream (at room temperature)
- 4 packs (8 ounces each) cream cheese (at room temperature)
- 8 tablespoons (1 stick) unsalted butter (at room temperature)
- 1 1/2 cups sugar
- 2 tablespoons cornstarch
- 1 1/2 teaspoons vanilla extract
- 1 teaspoon fresh lemon juice
- 1 teaspoon grated lemon zest
Instructions:
Step 1: Prepare the Pan
- Heat your oven to 375°F (190°C).
- Wrap the outside of a springform pan with a large sheet of heavy-duty aluminum foil, covering the bottom and sides completely. Wrap a second sheet around for extra protection.
- Lightly spray the inside of the pan with nonstick spray to prevent sticking.
Step 2: Mix the Batter
- In a large bowl, use an electric mixer to beat the eggs and sour cream until smooth.
- In a separate bowl, mix the cream cheese and butter until creamy. Add this to the egg and sour cream mixture, then beat until well combined.
- Add the sugar, vanilla, lemon juice, lemon zest, and cornstarch. Mix on low speed until just blended.
Step 3: Bake the Cheesecake
- Place the cheesecake pan inside a large roasting pan.
- Pour boiling water into the roasting pan until it reaches about 1 inch up the side of the cheesecake pan. This water bath helps the cheesecake bake evenly.
- Bake for 1 hour and 30 minutes to 1 hour and 45 minutes. The cheesecake should be set but still wobble slightly in the center when nudged.
Step 4: Cool & Serve
- Let the cheesecake sit in the water bath for about 45 minutes until the water is warm.
- Take the pan out of the water bath and remove the foil.
- Carefully remove the sides of the springform pan. You can serve the cheesecake directly from the base of the pan.
Tips for the Best Cheesecake:
