This creamy and rich cheesecake is easy to make and absolutely delicious. It’s a favorite for any occasion!

Ingredients:

  • 5 large eggs (at room temperature)
  • 2 cups sour cream (at room temperature)
  • 4 packs (8 ounces each) cream cheese (at room temperature)
  • 8 tablespoons (1 stick) unsalted butter (at room temperature)
  • 1 1/2 cups sugar
  • 2 tablespoons cornstarch
  • 1 1/2 teaspoons vanilla extract
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon grated lemon zest

Instructions:

Step 1: Prepare the Pan

  1. Heat your oven to 375°F (190°C).
  2. Wrap the outside of a springform pan with a large sheet of heavy-duty aluminum foil, covering the bottom and sides completely. Wrap a second sheet around for extra protection.
  3. Lightly spray the inside of the pan with nonstick spray to prevent sticking.

Step 2: Mix the Batter

  1. In a large bowl, use an electric mixer to beat the eggs and sour cream until smooth.
  2. In a separate bowl, mix the cream cheese and butter until creamy. Add this to the egg and sour cream mixture, then beat until well combined.
  3. Add the sugar, vanilla, lemon juice, lemon zest, and cornstarch. Mix on low speed until just blended.

Step 3: Bake the Cheesecake

  1. Place the cheesecake pan inside a large roasting pan.
  2. Pour boiling water into the roasting pan until it reaches about 1 inch up the side of the cheesecake pan. This water bath helps the cheesecake bake evenly.
  3. Bake for 1 hour and 30 minutes to 1 hour and 45 minutes. The cheesecake should be set but still wobble slightly in the center when nudged.

Step 4: Cool & Serve

  1. Let the cheesecake sit in the water bath for about 45 minutes until the water is warm.
  2. Take the pan out of the water bath and remove the foil.
  3. Carefully remove the sides of the springform pan. You can serve the cheesecake directly from the base of the pan.

Tips for the Best Cheesecake:

✔ A little cornstarch helps prevent cracks as the cheesecake cools.
✔ To move the cheesecake to a plate, slide a thin spatula under the crust and lift it with two large spatulas.
✔ Feel free to get creative with toppings—fresh berries, chocolate drizzle, or caramel sauce all work great!
