Ingredients:

  • Non-stick cooking spray
  • 7 large eggs (room temperature)
  • ½ cup butter (melted and cooled)
  • 2 tablespoons olive oil
  • 2 cups blanched almond flour
  • 1 teaspoon baking powder
  • ½ teaspoon xanthan gum
  • ½ teaspoon sea salt

Instructions:

  1. Prepare your materials: Gather all your ingredients. Preheat your oven to 350°F (175°C). Grease a silicone loaf pan with non-stick spray.
  2. Whisk the wet ingredients: Beat the eggs in a large bowl for about 3 minutes until they are smooth and creamy. Add the melted butter and olive oil, then stir until everything is well mixed.
  3. Combine dry ingredients: In a separate bowl, mix the almond flour, baking powder, xanthan gum, and sea salt until evenly combined.
  4. Mix the batter: Slowly add the dry ingredients to the egg mixture, stirring until you get a thick batter.
  5. Bake the bread: Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake for about 45 minutes, or until a toothpick inserted in the middle comes out clean.
