Ingredients

  • 6 tablespoons salted butter
  • 1 yellow onion, chopped
  • 6 garlic cloves, minced
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 1/3 cup all-purpose flour
  • 2 tablespoons fresh thyme (or 1 tablespoon dried thyme)
  • 2 tablespoons chopped fresh sage (or 1 tablespoon dried sage)
  • 1 bay leaf
  • 8 cups chicken broth (bone broth works great)
  • 1 pound boneless chicken (breasts or thighs)
  • 2-3 cups egg noodles (homestyle or store-bought)
  • 1 cup whole milk or heavy cream
  • 1/3 cup grated parmesan cheese
  • 1/4 cup chopped fresh parsley

Instructions

Step 1: Make the Soup Base

  1. In a large pot or Dutch oven, melt the butter over medium heat.
  2. Add the chopped onion, garlic, celery, and carrots. Sprinkle with salt and pepper. Cook for about 5 minutes until the vegetables start to soften.
  3. Stir in the flour, thyme, and sage. Let it cook for another 5 minutes to form a thick base for the soup.

Step 2: Add Broth and Cook the Chicken

  1. Pour in the chicken broth and stir well. Bring the soup to a boil.
  2. Add the chicken and bay leaf. If you have a parmesan rind, toss it in for extra flavor.
  3. Cover the pot, reduce the heat to a simmer, and cook for about 20 minutes, or until the chicken is fully cooked.

Step 3: Shred the Chicken and Cook the Noodles

  1. Remove the chicken from the pot and shred it into bite-sized pieces. Leave it in the broth after shredding.
  2. Bring the soup back to a boil and add the egg noodles. Let them cook for 6-8 minutes, or until tender.

Step 4: Add Cream and Finish

  1. Stir in the milk or cream to make the soup rich and creamy.
  2. Add the grated parmesan cheese and fresh parsley. Taste the soup and season with more salt and pepper, if needed.

Step 5: Serve

  • Serve the soup hot with crusty bread on the side.
  • If saving leftovers, remove the noodles before refrigerating to keep them from soaking up all the broth. Add the noodles back in when reheating.
